It’s BBQ Time

Summer is upon us and it couldn’t get any easier to cook up some good, healthy foods. Throw some meat and veggies on the BBQ and we have a simple, wholesome meal that didn’t heat up the house and tastes amazing. Add a side salad to that and it’s even better!

Our go to meal after an afternoon by the pool is something simple like burgers, turkey burgers or sausages, but it is just as easy to throw some chicken and veggies on the BBQ. This year, I have been a bit more adventurous, trying to grill all of our favourite veggies. In particular we love sweet potatoes, asparagus, carrots, broccoli and cauliflower. But for me, I also love peppers, onions and beets cooked on BBQ.















Sweet potatoes seem to cook the best if I just wrap a whole one in tin foil. They normally take the same amount of time as our chicken or pork tenderloin and I love it when they are really soft. My family is quite picky so I end up doing a lot of the veggies separately. Carrots for my daughter, plain and wrapped in foil. Asparagus is simple on the BBQ and my husband loves it wrapped in prosciutto. A little bit of olive oil, salt and pepper and it is a delicious side dish.

I finally started using the BBQ basket that I got a few years ago and love cutting up veggies to cook in it. I just grease it with a bit of coconut oil, throw in whatever is in the fridge and give it a stir once in a while. I normally just season my veggies with salt and pepper but you can add whatever spices you’d like to liven it up a bit. I love the combination of grilled peppers and onions.














This summer, I have rediscovered my love of beets and started cooking them on the grill. I cut them up, add a bit of balsamic vinegar and sea salt and wrap them in foil. It couldn’t get any easier and they taste wonderful.

Our favourite meats on the BBQ are normally boneless chicken breasts, pork tenderloin, burgers and sausages but the other day I was inspired to try grilling some shrimp. I don’t normally buy it because I am the only one in my household that likes it, but I think I am hooked. It was amazing and I can’t wait to get some more!

We are easy at my house, if we are running low on veggies to grill we can always have our meat with a salad. We have lettuce and kale straight from the garden now and we also love a simple cucumber and tomato salad. (Soon we will have garden fresh cucs and tomatoes too, I can’t wait!!)












Summer is about enjoying the beautiful days and time together and I don’t want to spend hours in the kitchen. Barbecuing makes life easier and allows us to enjoy good, wholesome food in a minimum amount of time. So get grilling!
